The humble Padrón Pepper pairs very well with Feta

So this is another very simple, but much lighter take on the Fried Padrón Pepper, this time with Feta cheese. And yes, I know that Feta is a Greek, not Spanish cheese, but I am taking the Mediterranean origins as my inspiration here. Although, I’m sure my Cypriot friend Thalia would quickly correct me and tell me it belongs to Cyprus. I’m happy to be corrected.

Bizarrely, Feta cheese has just been the subject of a viral TikTok recipe with cheery tomatoes and pasta that appears to have taken the world by storm with over 600-million views at the time of writing. So evidently it’s appeal and adoration is global!

This is a great dish to share with friends, cheap, quick and easy to prepare; but not most certainly not lacking in flavour. And the saltiness helps the wine to flow a little easier.

Fried Padron Peppers with Feta Cheese

Simple Tapas dish of Fried Padron Peppers, Feta Cheese and Sea Salt

Equipment

  • Frying Pan or Griddle
  • Food Tongs
  • Serving Plate
  • Bowl

Ingredients
  

  • 250 g Padron Peppers
  • 75 g Feta Cheese diced into 1cm pieces
  • 50 ml Olive Oil virgin or extra virgin
  • 2 tbsp Sea Salt flakes (Maldon)

Instructions
 

  • Wash the peppers under warm water and pat dry. Put the peppers into a bowl and pour over the olive oil coating each pepper.
  • Heat the griddle or frying pan until it is very hot. Add the peppers and cook until lightly blistered on all sides, approximately 5 minutes.
  • Remove the peppers and place back into the blow; sprinkle over the salt and add your feta cheese. Then cover with cling film. Leave for 5 minutes, this will allow the peppers to lightly steam and warm through the feta cheese.
  • Place the peppers and feta onto your serving plate and drizzle over any remaining oil from the bowl and serve.
